Ghost of tuishma the whole games music is flat out amazing one of the best soundtracks out there.

For regular battle themes, I most fondly remember the second from Tales of Eternia. Feeling lost after teleporting to a new and alien planet, and then your first fight BAM you get hit with this awesome battle theme:

Years later, Tales of Symphonia pulled much the same situation. Not quite as good a theme IMO but still awesome:

For best final bosses, I would have nominated Symphonia's until I played Freedom Planet. The build up over the final levels, the triumphant first two stages, and then finally you've reached the point where the boss means business. An atmospheric fight with a frantic theme going up against an dangerous acrobatic badass enemy who can kill you very quickly. A fantastic capstone to a fantastic game filled with fantastic music.

While it’s my least favourite Final Fantasy game Mystic Quest had some kickass tracks. Particularly Battle 1, Battle 2, Last Castle, and Battle 3.
