The 2600k is only worth it if you want to do some serious photo editing/movie editing, or the like, but for gaming it isn't worth it. Put that money towards a second GTX 460, that will really be killer! I have one 460 and will eventually get two and run it in SLI.

Well with a custom pc manufacturer, you have to deal with shipping (usually expensive) and they charge for labor. However a lot of them (IBUYPOWER and CYBERPC) have great deals and prices to boot. IMO you save a lot more money by just building the thing yourself. As for what you should get, I personally would go with a cheap laptop for school and whatnot, and then use the rest for a good gaming desktop that you can eventually upgrade easily without voiding the warranty.

All of the components you have listed are going to be good enough for 1080p output. I have an i5 2500k myself and let me tell you, that thing rocks. That price is definitely not bad either, though I personally always build my computers from scratch to save money ;)
